Chocolate Popcorn Crunch
Nonstick spray
1 1/2 lbs. chocolate confectioners coating (cut into smaller pieces)
3 T peanut butter
14 c. popped popcorn
3 c. Rice Krispies
2 c. dry roasted peanuts
Spray a large cookie sheet with nonstick coating; set aside.
Combine cut up chocolate and peanut butter in a large microwave-safe bowl. Micro-cook at 100% (high) power for 2-3 minutes or till chocolate is melted, stirring after every minute.
In the meantime, put popcorn, Rice Krispies, and peanuts into a large bowl.
Pour melted chocolate mixture over popcorn mixture, tossing to coat well.
Spread onto prepared cookie sheet; cool thoroughly. Break apart and store in a tightly covered container for up to 5 days. Makes 22 cups.
