Karee's Citrus Relish
Three 3 oz. packages raspberry Jell-O
3 cups water (boiled)
Mix Jell-O with boiling water and let cool (not set, just cooled)
7 cups (about 2 packages) fresh cranberries (rinse and sorted)
Four Fuji apples (cored and shredded)
Four oranges (skinned, then peel off each section's "covers")
"Pulse" cranberries, apples, and oranges in a food processor until chunky.
1 cup sugar
1 large can crushed pineapple (drained)
Combine cooled Jell-O mixture with processed fruit, sugar, and crushed pineapple. Pour into dish or individual jars. Refrigerate until firm. May be frozen.
