Teri's Glazed Ginger Cookie Strips
¾ cup Butter or Margarine
1 cup Sugar
¼ cup Mild Molasses
1 Egg
Beat above ingredients until fluffy. Add the following dry ingredients and mix well.
2 ½ cups Flour (can add 3T additional flour for altitude)
2 tsp. Baking Soda
½ tsp. Salt
½ tsp. Ginger
½ tsp. Cinnamon
½ tsp. Ground Cloves
Heat oven to 350°. Divide dough into 6 equal portions. Roll each portion into 12" strip (like a snake). Flatten slightly. Brush strips with water and lightly sprinkle with sugar.
Bake 12-15 minutes or until golden (do not overbake!).
Cool 5 minutes. Cut diagonally into ¾ inch bars (16 cookies per strip). DO NOT SEPARATE. Cool completely.
GLAZE
¾ cup Powdered Sugar
1 T. Butter
1 T. Milk
½ tsp. vanilla
Combine glaze ingredients in a small bowl. Add a little more milk if needed. Drizzle glaze with spoon over cooled bars. Let set. Separate bars and enjoy!
