Romaine Salad with Lemon Dressing
2 heads romaine lettuce
1 lb. bacon (cooked and crumbled)
1 cup Swiss cheese (grated)
1/3 cup Parmesan cheese (shredded)
2/3 cup slivered almonds (toasted--may use sliced)
DRESSING:
1/2 cup vegetable oil
Juice of 2-3 lemons
1/2 teaspoon garlic paste or 1 clove garlic (pressed)
1/2 teaspoon salt
1/4 teaspoon pepper
Combine lettuce, bacon, Swiss cheese, parmesan cheese, and *toasted almonds in a large bowl. Toss and chill until ready to serve.
Mix dressing ingredients together and refrigerate.
Pour dressing on a few minutes before serving--if you do it too far in advance the salad will wilt. Toss well before serving
*Toast almonds under broiler until lightly browned. Be careful...almonds will burn very quickly if not watched!
