Louise's Pound Cake
- 2 cubes butter
- 2 c sugar
- 3 eggs
- 3 c flour
- 2 tsp baking powder
- 1/2 tsp salt
- 14 1/2 oz can evaporated milk
- 2 tsp almond or lemon extract
Cream butter and sugar
until fluffy. Beat in eggs one at a time and mix well. Sift flour, baking powder
and salt together. Add alternately with the evaporated milk. Stir in extract.
Beat until well mixed and light. Pour into greased and lightly floured bundt pan
or 10-inch tube pan. Bake at 350°
for 55 to 60 minutes. Allow to stand 10 minutes after removing from oven, then
turn out of pan. Serve with fresh fruit and whipped cream.
